Brussels Sprout Slaw

1 lb Brussels sprouts

⅓ cup slivered almonds

⅓ cup dried cranberries or cherries

⅓ cup shredded Parmesan cheese

¼ cup olive oil

2 Tbsp apple cider vinegar

1 Tbsp honey

1 Tbsp Dijon mustard

1 garlic clove, minced

Salt & pepper to taste


  1. Prepare Brussels sprouts by trimming off tough ends and any damaged leaves
  2. Shred the Brussels sprouts by thinly slicing with a chef knife. A food processor with a slicing blade or a mandolin may speed up the process.
  3. Mix shredded sprouts, almonds, dried fruit and parmesan together in a large bowl.
  4. In a small bowl, whisk together oil, vinegar, honey, mustard and garlic.
  5. Pour dressing over the slaw and mix well. If desired, season with salt and pepper to taste.
