Blueberry Sauce

  • 1 tsp cornstarch
  • Dash of salt
  • ¼ cup water
  • 1 Tbsp sugar, honey, maple syrup or sugar substitute
  • 1 cup fresh or frozen blueberries
  • 1½ tsp lemon juice (optional)
  • ½ tsp grated lemon peel (optional)


  1. In a small saucepan, whisk cornstarch, salt, sweetener and water until smooth. Add the blueberries, lemon juice and lemon peel. 
  2. Bring to a boil over medium heat, stirring constantly. Cook 2–3 minutes or until thickened, stirring occasionally. 
  3. Serve over whole grain pancakes or waffles.

The goal of Live It is to showcase nutrient-dense foods and teach viewers doable ways to use them in order to promote wellness in our community.
