Parmesan Roasted Asparagus

  • 1 large bunch of asparagus
  • 1 Tbsp olive oil
  • ¼ cup fresh parmesan cheese
  • Black pepper (optional)


  1. Preheat oven to 400°.
  2. Line a baking sheet with parchment paper.
  3. Wash asparagus and trim off the woody ends.  
  4. Place on parchment-lined baking sheet in a single layer.
  5. Drizzle asparagus with olive oil and roll asparagus to coat.
  6. Roast for 15 minutes or until asparagus is tender.
  7. Sprinkle with parmesan cheese and return to oven for another minute to melt cheese.
  8. Serve and enjoy!

The goal of Live It is to showcase nutrient-dense foods and teach viewers doable ways to use them in order to promote wellness in our community.
