The Ultimate Heart-Healthy Salmon Cake

Ingredients

  • 1 lb fresh salmon or 1 large can salmon (14.75 oz)
  • ¼ cup quick oats
  • ½ cup plain Greek yogurt
  • 1 egg 
  • ¼ cup finely chopped onion
  • 2 tsp dried dill
  • Pepper to taste

Instructions

  1. Add salmon to a medium bowl, remove small bones and skin and flake with a fork.
  2. Add all remaining ingredients and stir to combine. Let mixture set at least 10 minutes.
  3. Spray a non-stick griddle with olive oil and heat to medium.
  4. Shape mixture into patties and cook on each side until lightly browned and firm.
