Corn Salsa Salad
Staff-submitted for at-home edition of Live It: Summer Salads – Summer 2020
Ingredients
1 cup frozen corn, thawed
1 cup cherry tomatoes, halved
½ cup red onion, chopped
1 4-oz jar pimentos, drained
2 limes
2 Tbsp of fresh cilantro
Pinch of salt
Instructions
- Toss the corn, halved cherry tomatoes, onion and pimentos in a bowl.
- Add juice from 2 limes, cilantro and salt.
- Toss together and serve.
Note: This salad tastes even better the second day!
