Balsamic Roasted Cabbage Steaks

As demonstrated in the “The Other Red ‘Meat’” episode of Live It – April 2018

Ingredients

  • 1 head of red cabbage
  • 3 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • ½ tsp Dijon mustard
  • 1 clove garlic, minced
  • ½ tsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°.
  2. Lightly coat a rimmed baking sheet with oil or cooking spray.
  3. Rest the base of the cabbage on a cutting board. Using a serrated knife, slice into ¾–1” thick slices. Transfer to a baking sheet.
  4. To make the glaze, combine olive oil, balsamic vinegar, Dijon mustard, garlic and honey in a small bowl and whisk to combine. Brush glaze all over both sides of the cabbage steaks.  
  5. Cook for 20–25 minutes, or until crisp tender and starting to brown around the edges. Serve warm. 

 

Switch it up! Try using green cabbage or cauliflower! Use the same glaze or simply brush each side with olive oil and season with salt and pepper. Roast per recipe instructions.
