  • 2 cups quick-cook oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp salt
  • ¼ cup packed brown sugar
  • 2 cups skim milk
  • 2 eggs
  • ½ tsp vanilla extract
  • 1½ Tbsp melted butter
  • 2 cups frozen mixed berries
  • ¼ cup pecans, chopped

  1. Preheat oven to 375°. Coat a 2-quart baking dish with non-stick cooking spray.
  2. In a medium bowl, mix together oats, baking powder, cinnamon, salt, and brown sugar. Set aside.
  3. In a separate bowl, mix together the milk, eggs, vanilla and butter.

Note: If using non-quick cook oats, increase baking time to 35–40 minutes.
